Weight Watchers 3 Ingredient Pineapple Cake

I stumbled across this Weight Watcher recipe a few years ago and it is fantastic.  It takes about one whole minute to whip together and it is low calorie and no fat!!

 

WHAT YOU NEED:

  • 1- Angel Food Cake Mix
  • 1- 20 oz. Can Crushed Pineapple in juice
  • 1- Fat Free Cool Whip

 

 

DIRECTIONS:

Preheat oven  350 degrees F.  Mix package of Angel Food Cake Mix and one 20 oz. can of crushed pineapple.  Pour into an ungreased 9″x13″ pan and bake for 30 to 40 minutes.   Let Cool.  Spread Cool Whip on top.  Makes 16 servings!

Fat Free Yogurt Cake

I came across this recipe for yogurt cake on pinterest.  I made a few ingredient swaps to reduce the calories and fat.  I am absolutely amazed how moist and delicious it is.  Let’s not forget, it is really easy and quick to make!

yogurtcake WHAT YOU NEED:

  • 1-1/2 cups nonfat yogurt
  • 3/4 cup egg beater
  • 1 cup sugar
  • 1 tsp. vanilla
  • 1-1/2 cup flour
  • 1 tablespoon baking powder

DIRECTIONS:

In a large bowl, beat on low speed egg, yogurt, sugar, and vanilla about 30 seconds. Add flour and baking powder and beat another 1-2 minutes. Pour into a round cake pan sprayed with cooking spray. Bake at 350° for 30-35 minutes. Let cool. Sprinkle with powder sugar. Makes 8 servings.

Skinny S’more Pie

If you love s’mores, you will love this pie.  Only 5 ingredients and super easy!

WHAT YOU NEED:

  • 1 (2.1 oz) package sugar-free instant chocolate pudding
  • 2-1/4 cups fat-free milk
  • 1 cup fat-free whipped topping
  • 1 reduced fat graham ready crust
  • 1 cup miniature marshmallows

DIRECTIONS:

In a large bowl, mix pudding and milk until thick.  Fold in whipped topping.  Pour in ready crust and top with marshmallows.  Chill for 4 hours.  Makes 8 servings.

Skinny Red Velvet Cake

This is the perfect Valentine Dessert!  Happy Valentine’s Day!

WHAT YOU NEED:

  • 1 box red velvet cake mix
  • 1 can diet pepsi or any diet cola

DIRECTIONS:

Beat the cake mix and diet soda in large bowl on medium speed for 2 minutes.  Pour batter into a 9″ x 11″ baking dish that has been sprayed with cooking spray.  And bake a 350 degrees for 25-30 minutes minutes. Let Cool.  Ice with Skinny Vanilla Cream Cheese Frosting.  Makes 16 servings.

Skinny Vanilla Cream Cheese Frosting

I love cream cheese frosting; but, not the fat and calories.  Here’s my recipe for low calorie, low fat frosting.

WHAT YOU NEED:

  • 1-8oz package fat-free cream cheese
  • 4 tablespoons (1/2 stick) light margarine
  • 2 tablespoons fat-free sour cream
  • 2 teaspoons pure vanilla extract
  • 1 tablespoon cornstarch
  • 1 cup confectioners sugar

DIRECTIONS:

Beat cream cheese, margarine, sour cream in large bowl until smooth.  Mix in vanilla and cornstarch.  Gradually beat in powder sugar.  Makes 16 servings.
