WHAT YOU NEED:
- 6 large eggs
- 1 tablespoon light mayonnaise
- 1 teaspoon yellow mustard
- paprika, optional
Place eggs in a saucepan and cover with water. Bring to a boil, remove from heat, and let eggs stand in hot water for 20 minutes. Remove eggs from hot water and place in a bowl of ice water. Peel.
Slice eggs in half lengthwise. Remove yolks and transfer to a bowl; mash with a fork. Stir mayonnaise and mustard into yolks until smooth. Spoon yolk mixture into the egg whites and lightly sprinkle with paprika. Chill before serving. Makes 6 servings.

- 1 cup corn meal
- 1 cup whole wheat white flour
- 1/4 cup sugar
- 3 teaspoons baking powder
- 1 cup fat free milk
- 1 egg, beaten
- 1/4 cup canola oil
In a bowl, combine first 4 ingredients. Add the milk, egg and oil. Stir until blended. Pour into a 8×8 baking dish coated with cooking spray. Bake at 425 degrees for 20-25 minutes or until golden brown. Cut into 16 squares.
